Easy Blueberry Dark Chocolate Banana Bread Recipe

Just like you and the rest of the world, we are stranded at home, so we are trying to do fun things while social distancing.

And inspired by CBC Montreal's Dr. Arruda baking challenge, quickly cooking something yummy, to keep us feeling good and avoid anxiety as we navigate these troubled times, seemed like a perfect idea. 

We were wondering what to do with some overripe bananas we had around and the answer was pretty obvious.
So, we (please read Ana 😊) came up with what we think is the best simple banana bread recipe in the world. Ok, in all fairness we are a bit subjective here. But only a bit 😀.

The recipe itself is very simple, but it turned out to be extremely delicious. That's why we wanted to share it with you, just in case you want to try it too.

This is an easy to do, simple ingredients recipe that takes no more than 10 minutes to prepare and around 25-30 minutes to bake. And there is no need for a mixer, either!

What you will need:

  • 3 ripe bananas (overripe will do even better if you are looking for more sweetness)
  • 3 eggs
  • 1 cup of flour
  • 1 tbsp coconut oil
  • ½ tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ cup blueberries 
  • ½ cup mix of walnuts and dark chocolate (we used 82% because it's healthier, but you could use any kind of crushed chocolate)

How to prepare it:

In a large bowl mash the bananas and then add the eggs.

Then, mix in the baking soda and baking powder and in the end stir in the flour.

Lastly, add the cinnamon, blueberries, walnuts and chocolate chips.

Whisk until they are properly combined in a nice smelling batter. 

Now transfer it to a loaf pan, put it in the oven at 300°-350°F (150°-175°C) and after 25-30 minutes, voila:

Yes, it's that simple! 

Of course, you could add/replace any ingredient to customize the recipe to your liking.

You can add other fresh fruits or yogurt, but be aware that this will make the cake moist.

You can add raisins, dates or other nuts like almonds or caju for extra crunchiness.

You can even add some maple syrup in the composition or maybe drench it over after you get it out of the oven.

Sky's the limit, depending on what you have in your cupboard and on your imagination.

We wanted to be bold and added some ketchup on it, as you can see below:

Just kidding 😀, it's not ketchup, it's our smooth low sugar Wild Rosehip Jam (and the other one is the Wild Blackberry Jam).

Because there is no extra sugar added in this recipe, we wanted to make it even more spectacular and it turned out to be the best dessert ever.
